Central Coast Merlot is a juicy and complex wine, featuring aromas of plum, blackberry and vanilla. The rich, full-bodied palate offers notes black cherry and blueberry with a hint of spice on the finish. The grapes for our Central Coast Merlot were destemmed and cold soaked for two days to enhance the extraction of color and flavor from the fruit. Fermentation occurred over a period of two weeks at a maximum temperature of 85°F. Only the free-run juice was selected for this wine, which was aged on oak to impart notes of toast and pepper to the final blend.
