Utterly clean, crisp, minerally and thirst-quenching, this is a perfect example of classic Pouilly Fume. Made of 100% Sauvignon Blanc, Pouilly Fume is the direct neighbor of Sancerre, typically with more clay in the soil but the same climate and riverside influences. This is a wonderfully ripe, all tank, Sauvignon Blanc with nice body and excellent focus and cut. Green melon, lemon, lime and gunflint aromas and flavors abound and lead to a dry, green citrus and flint finish. Serve with fresh seafood or as an elegant aperitif.
